Alchermes Liqueur in Italy was well-known in Florence at the beginning of the sixteenth century, as an “elixir of long life”. The lively color and the characteristic aroma, obtained from various spices such as cinnamon, carnation, and cardamom, make it indispensable in pastry. From the organic oasis immersed in the territory of Montalcino, a collaboration between Col d'Orcia and the Franchi apiculture, a local and family-run business, was born. The combination of the Franchi’s experience and the vast uncontaminated territory of Col d'Orcia provides the optimal conditions for the production of high-quality organic honey.
The honey is produced by selected bees present in Col d'Orcia that graze on the different varieties of flowers and grassing of the vineyards. Among the varieties of melliferous flowers planted in recent years, there are arable crops such as white mustard, Alexandrian clover, phacelia, alfalfa, and on. Then the richness of native wildflowers such as a strawberry tree, rosemary, and ivy, present in the more than 50 hectares of wood on the estate.

Grapes: 100% Chardonnay. Selected clones coming from Burgundy.
Vinification: Grapes are chilled at 10°-12° in a conditioned cellar. Soft pressing was followed by an overnight decanting of the juice to allow settlement of the rough impurities. Fermentation took place for 15 days at temperatures between 20°C and 22°C in new French oak barriques. After the alcoholic fermentation, the wine is kept on the yeasts and frequently stirred up (bâtonnage) until the following spring. Malolactic fermentation was only partially done, only half of the barriques undergo it.
