Aging: 12 months in Slavonian oak casks between 75 and 150 hl, followed by refinement in bottle.

Organoleptic characteristics:
Colour: deep ruby red with violet hues.
Bouquet: ample and complex with notes of cherry and sour cherry followed by a woody and spicy fragrance.
Flavor: elegant and soft with pleasant ripe tannins. The aftertaste is fruity, long, and persistent.

The "Le Balze" wine takes its name from an ancient Chiantigiano terracing system. It is mainly obtained from Sangiovese grapes and other native vines.
Il Poggiolino winery was bought in 1974 by Carlo Pacini. The great passion for nature and the sensitivity towards the territory have meant that two generations always followed one another with a great desire to create an authentic wine. With these assumptions, the winery has grown by expanding for about 25 hectares divided into vineyards, olive trees, and forests.

In the Classic area of the Canalicchio, one of the most suitable for the denomination, the fresh microclimate favors an optimal, slow and gradual maturation, developing noble and elegant aromas in the wine. Rosildo Pacenti bought the Canalicchio estate in 1962 and was among the first farmers to believe strongly in the potential of Montalcino and to enhance the Sangiovese, a vine that is able to reach excellence on this hill. The winery's first vintage of Brunello di Montalcino was 1966.

Vinification: The harvest is carried out manually. The fermentation takes palace in steel tanks. Fermentation occurs at a controlled temperature no higher than 30° C.
Ageing: After completing the malolactic fermentation, the wine continues its ageing in steel for several months, then bottled, and continues further with refinement in the bottle.
Organoleptic characteristics: intense ruby red colour, hints of red and black fruit: cherry, blackberry, raspberry, red currant, notes of spices and black pepper. Fantastic freshness on the palate, complex and elegant with harmonious tannins, of great personality and pleasantness.
Pairings: grilled meats and traditional Tuscan pasta dishes.
Alcoholic strength: 13.50% vol.

Production area: San Donato in Poggio
Average altitude of the land: 350 a.s.l.
Soil type: clayey soils with a notable presence of limestone, marl and alberese.
Vinification: maceration in steel for 15-20 days with temperature control. This is followed by the ageing of about a year in new and second passage French oak barriques during which the malolactic fermentation takes place. Refinement in the bottle for at least 12 months before being marketed. Not filtered.
Alcoholic strength: 14,5% vol.
Ageing potential: the fairly long evolutions are excellent and interesting.
An intriguing and balanced wine with notes of red fruit, toasted hazelnut and violet where the temper of Sangiovese is finely tempered by the sweetness of the tannins.
