In the Classic area of the Canalicchio, one of the most suitable for the denomination, the fresh microclimate favors an optimal, slow and gradual maturation, developing noble and elegant aromas in the wine. Rosildo Pacenti bought the Canalicchio estate in 1962 and was among the first farmers to believe strongly in the potential of Montalcino and to enhance the Sangiovese, a vine that is able to reach excellence on this hill. The winery's first vintage of Brunello di Montalcino was 1966.

Vinification: The harvest is carried out manually. The fermentation takes palace in steel tanks. Fermentation occurs at a controlled temperature no higher than 30° C.
Ageing: After completing the malolactic fermentation, the wine continues its ageing in steel for several months, then bottled, and continues further with refinement in the bottle.
Organoleptic characteristics: intense ruby red colour, hints of red and black fruit: cherry, blackberry, raspberry, red currant, notes of spices and black pepper. Fantastic freshness on the palate, complex and elegant with harmonious tannins, of great personality and pleasantness.
Pairings: grilled meats and traditional Tuscan pasta dishes.

Vinification: manual harvest with careful selection of the grapes both in the vineyard and in the cellar. Direct pressing of the grapes with pneumatic press and fermentation in steel tanks at a controlled temperature of 28°-30°C with double short daily pumping combined with delestage. Maceration on the skins for about 20 days.
Ageing: after malolactic fermentation, ageing in steel about 8 months and then carefully refined at controlled temperatures for 12 months in French tonneaux and oak barrels of first, second and third passage. Further ageing in the bottle for 6 months before to exit on sale.
Organoleptic characteristics: the brick red of the colour is followed by a rich bouquet of red fruits, violets, blackberries, coffee and leather. It goes well with stewed wild boar, Florentine steak and grilled meats.

Refinement in the bottle for at least 12 months before being marketed. Not filtered.
Alcoholic strength: 14,5% vol.
Ageing potential: the fairly long evolutions are excellent and interesting.
An intriguing and balanced wine with notes of red fruit, toasted hazelnut and violet where the temper of Sangiovese is finely tempered by the sweetness of the tannins.

Cantico is made from Merlot grapes from the company's historic vineyard dated 1981. An elegant and silky wine where the cherry is wrapped in mint, eucalyptus, lavender and truffle. Sapid with sweet tannins and mineral notes.
